BACON & BEER CLASSIC TAKES OVER THE HOME OF THE MARINERS

An event unlike any other, Cannonball Productions is bringing the Bacon and Beer Classic to America! The Bacon and Beer Classic is a one-of-a-kind event hosted inside major league baseball stadiums across the country. It is a premier experience focused on traditions, where one’s nostalgia of baseball meets their love for bacon and craft beer!

As thousands of attendees walk through the stadium they will get a taste of history through the hundreds of craft brew samples and mouth-watering bacon-inspired tastes local restaurants cook up. Live music will get people dancing, interactive games will bring out their inner kid, and the cooking demos and beer schools will teach everyone – from the expert to the novice – a thing or two about bacon and beer.
Cannonball Productions selected Seattle as the first city to host this inaugural event series, on May 17th at Safeco Field. When asked why Seattle was chosen as the kick-off point, Kate Levenstien, President (and founder of Bacon and Beer Classic), Cannonball Productions stated “We’re not interested in just giving our guests a run of the mill experience. The Bacon and Beer Classic brings together THE BEST in local food, brews, and entertainment. Our event is not only about the experience, but it’s about the quality. Seattle certainly knows its beer and Seattle knows its food. Couple that with it having some of the most die-hard sports fans in the country- and well, it just makes sense. We’re thrilled to be kicking off at Safeco Field on May 17th!”

The participating vendor line up is a good one and growing by the day. Currently over 80 local restaurants and breweries have signed on to participate in the event. Each brewery will serve at least two of its most coveted brews. The restaurant chefs have been given the challenge of serving their most delectable bacon inspired dish. Be prepared to not only taste some bacon classics, but bacon used in a variety of different ways you’ve never seen (or tasted) before!

How will everyone know which brew and bacon dish was best? Guests will be able to download an interactive mobile application that not only lets them vote for their favorites, but also provides a full set of useful and interactive features to use while at the event. After both sessions, Cannonball Productions will tabulate the votes, and award one restaurant and one brewery the title of best in show.

In addition to the bacon and brew experience, the event has enlisted a number of the most popular bands the Seattle area has to offer. Bands will play next to the stadium dugouts. Guests can choose to take a break from the sips and tastes and immerse themselves in the concert element of the experience. Also, along the promenade, guests can interact with a number of games and activities. These include but are not limited to; cooking and brew schools, Cornhole tournaments, giant beer pong, Frisbee games, and large-scale jenga… just to name a few!

This popular event will be drawing in attendees from all over Seattle and the Northwest region. Attendees can choose from two event sessions, or plan to attend both! Attendees will need a ticket for each session they attend. The first session will be held from 12pm-4pm, and the second from 6pm-10pm. The Bacon and Beer Classic is and will always be an all-inclusive event. General Admission tickets are $59, and they are going fast!

Each guest will receive a souvenir Bacon and Beer Classic cup. Guests can also choose to purchase a VIP experience ticket that will give them access to a variety of exclusive privileges. These include but are not limited to; VIP lounge, exclusive brews and bacon tastes, a guided tour of the stadium, and special experiences.

While this is a national event series, Cannonball Productions works extremely hard to make it a local experience, working and partnering with local businesses and groups to bring together the best the area has to offer. They have partnered with the charity One Brick, in order to share the experience and bring together volunteers in the Seattle area. Cannonball Productions has also pledged to donate a portion of the proceeds from the May 17th event to the ongoing Oso mudslide relief efforts.

Bellevue restaurant slated to open April 24

Hokkaido Ramen Santouka, the internationally acclaimed Japanese noodle restaurant known around the world for its Shio Ramen, is opening its first freestanding restaurant in the United States.

The Bellevue store will be one of 10 restaurants in the States; the others are part of the Mitsuwa Marketplace grocery store chain. The new restaurant is slated to open April 24, 2014, in Bellevue. Santouka’s Bellevue location joins its expansive list of 53 existing restaurants in 10 countries around the world.

“This expansion is significant for us because it is not only our first brick and mortar restaurant in the United States, it’s also in a market that is experiencing a high demand for ramen,” said founder Hitoshi Hatanaka. “We are excited to be a part of the growth of ramen in Seattle.”

Hokkaido Ramen Santouka began in 1988 as a nine-seat, family-run ramen shop in Asahikawa, in the center of Japan’s northernmost island, Hokkaido. While that region is known for its Shoyu (soy sauce flavor) ramen, Santouka’s signature Shio Ramen became a big hit.

The Bellevue Santouka restaurant will share all of the features that have brought the chain international acclaim, including its signature dishes, such as the Shio Ramen. The dish, known for its bright red pickled plum (umeboshi)— a unique ingredient that brings an artful composition, satisfying crunch and pleasantly tangy taste to the dish.

Unlike other ramens, Santouka ramen is pearl-colored and served at the perfect temperature, (hot, but not too hot) to complement the many flavors, some of which have been cooking for nearly 20 hours.

Hours: 11 am–9 pm daily

Location: 103 Bellevue Way, Suite 3, Bellevue, WA, just a block from Main Street in downtown Bellevue

Phone: 425-462-0141

About Santouka
Santouka, which launched as a nine-seat, family-run ramen shop, has today grown to one of the most sought-after ramen restaurants in the world, available in 10 countries including the U.S., Japan, Canada, Hong Kong, Taiwan, Singapore, Malaysia, Indonesia, Philippines and Thailand. Jeffrey Lunak’s Kaisho Brings Asian Fusion to Downtown Bellevue

By Laura Hunter

As downtown Bellevue continues its transformation into a formidable foodie enclave, Kaisho brings an eclectic blend of Eastern and Western flavors in a true Izakaya “small plates, made to be shared and served when they’re ready” style. Helmed by Chef Jeffrey Lunak (a former protégé of Iron Chef Morimoto) and Chef de Cuisine Kalen Schramke, Kaisho joined neighbors like Blue C Sushi and Moshka on December 7th and large plate menus, and even left a bit of room to sample some dessert – which will be a must-do when you arrive, let me tell you now.

The restaurant interior sports an ultra-modern feel – polished white melamine offset by brightly colored baubles and traditional paper lanterns. At 9 o’clock on a Saturday the patronage was the typical mix – a young couple on a date, a “Guys’ Night Out” table, a family with a stroller, three couples around my vintage all passing plates around. There’s also a bar/lounge slightly separated from the dining area, and high industrial ceilings keep the conversational noise from other tables at a low hum without being overpowering.

As you walk through Kaisho’s entrance you see a welcome banner which reads: “Kaisho means ‘meeting or gathering place’. It’s where Japanese tradition and technique intersect with American originality and hospitality.” And the servers who took care of me that night certainly took their charge of “hospitality” to heart – servers and runners made a point of asking my name, even if they forgot it the moment I left it still made me feel like I was part of the family. The head waiter clearly knew his trade and offered a running commentary of the various dishes that I sampled, from a description of the 15-hour process where they smoke their pork over alder wood, to how the sake that I sampled (Hou Hou She sparkling sake, oh so good) offered a good balance to the fire in the dragon sauce that garnished one of the appetizers.

The menu contains a number of standards in “small”, “medium”, and “to share” sizes, plus a scattering of specials like an exquisite long-line caught black cod over a reduction of tomato and daikon, with a velvety butter sauce that was enough to bring it all together without verging into overpowering. The moo shu pork tacos are not to be missed – wafer-thin taco shells surrounding pork-belly comfort-food goodness. And as I hinted at above – leave enough room for the banana upside-down cake, or for some of your favorite ice cream flavors from Cupcake Royale.

Washington's Weed Battle Over; Poker Up Next?

$
0
0

For some time now, the battle over recreational marijuana legalization in Washington has been over and done with. In 2012, Initiative 502 passed allowing for possession and use of small amounts of marijuana by adults ages 21 and over. The full implications of this legal development have not yet been realized, as recreational marijuana stores have yet to truly get off the ground. The Washington Post recently wrote that there could be further delays in getting these stores opened on a wide scale (like that which we've seen in Colorado so far this year).

Still, even with recreational stores yet to open, the economic implications for the state are enormous. In Colorado, it was estimated that the state government raked in $2 million in tax revenue from one month's worth of sales at just 59 total stores—likely only a fraction of the number that will ultimately be opened throughout the state. And if any state could match these numbers, it's likely Washington, where cannabis enthusiasm, some would say, is equally high. Consider the assertion by the Washington Post article cited previously that Seattle has half as many medical marijuana dispensaries as Starbucks locations, and you start to get the idea!

But looking ahead, the battle for recreational marijuana isn't the only major legalization dispute with huge implications for Washington's economy. As it turns out, online gambling is back on the table, despite having been treated more harshly in Washington than almost anywhere else in the country.

Back in 2006, Washington's state government sought to eliminate online gambling by making it a felony offense (as in, significant jail time) to play real money poker online. However, there are a few factors that are pushing states all across the country to angle once more for the legalization of online gambling. First is the idea of separating the concepts of chance and skill gaming, with poker counting as a game of skill (potentially allowed in some states), and activities like slot machines or roulette classified as games of raw chance (and likely kept illegal). More important, however, is the economic profit being demonstrated in states with legal online gambling—particularly in New Jersey.

Long recognized as a hot spot for casino gambling, New Jersey has made significant leaps in online gambling as well, with the industry really getting off the ground in 2014. In the early going, it's the Borgata Casino and its partnership with the Partypoker leading the way, with a 37% combined share in the online poker market. This pairing brought in approximately $4.5 million in revenue in the month of March alone. While the hope among those backing online poker in the state is that this number can grow considerably, it's still a massive chunk of change that New Jersey's entertainment economy simply wasn't generating before. Debate is ongoing over just how much the state figures to profit from taxes on Internet gambling, but suffice it to say the number will be significant by the end of year one!

The question, then, is why a state like Washington—generally viewed as being fairly progressive—wouldn't want to follow suit with online gaming regulation. According to a recent article published by Bluff, discussions are ongoing regarding this matter. Poker advocate Curtis Woodward is spearheading the effort to get some form of online gaming legalized and regulated in Washington in the near future. Woodward acknowledges the difficulties involved (and he himself has failed to push this effort in the past), but he also notes that the Washington State Gambling Commission is keeping an active eye on other states to observe just how online poker is being regulated and controlled.

But for the poker players among us, there isn't much debate on the topic. It would certainly seem that a state ready to legalize recreational marijuana—and a state set to profit enormously from that decision—ought to be ready to let us play poker online!

Like Champagne or Bourbon, Tequila is a product of specific origin (mainly Jalisco and several others). Aging and finishing techniques add further nuances, which festival exhibitors help navigate. Mezcal, conversely, is made almost always from the Espadin agave (a small portion from indigenous Oaxacan agave varieties). Most distillers of Mezcal are smaller and relatively unknown, bringing the spirit a current underground cult following amongst Seattle-area bartenders. Mezcal, being distilled only once, is known for a more rugged taste than tequila. The festival sheds light on this emerging spirit.

Participants include such producers as El Tesoro, Don Julio, Los Altos, Cazadores, and returning best Mezcal winner Wahaka Mezcal (as voted by 2013 NWTF attendees).

Bartenders: have a worthy NWTF cocktail recipe? Enter the festival’s cocktail competition by June 1 and you could win a trip to Mexico! The top three cocktails will be made live and judged at the festival. Submission: www.nwtequilafest.com/?page_id=810.

Tickets for the festival are sold in three package levels:
Blanco– General Admission, $45 ($55 at the door): includes a souvenir tasting cup, 8 tasting tokens to sample tequila, mezcal, beer and cocktails.

Reposado– VIP level, $65: includes a Glencairn tasting glass, 10 tasting tokens, and early entry (2 p.m.) the day of the festival.

A portion of all ticket sales benefit the Seattle Benevolent Guild, a non-profit group committed to assisting children's charities and support groups in the Puget Sound area. Additionally, proceeds from sales of the festival’s tax-free retail area, in which all festival products will be sold, will also benefit Seattle Benevolent Guild. Unique Partnership Forming On The Eastside

There are various partnerships in the restaurant & bar world. Some are often financial, while others are quite familial. In the early 1990s, Marc & Bret Chatalas formed the latter in Madison Park with their first restaurant, Cactus. What began as a humble tapas joint near the park eventually grew into a very successful restaurant group, with locations in Kirkland, Alki Beach, South Lake Union and most recently Bellevue Square. Cactus Restaurants have always delivered on both exceptional service and a truly innovative and inspired menu, featuring cuisine from Mexico and the American Southwest.

James Weimann and Deming Maclise are also no strangers to what a burgeoning partnership can foment. The two (restaurant veterans) met around 2008 and decided to come together on a Parisian café & bar which opened in Ballard in 2009. Bastillewas a huge success and led to several other collaborations. Poquito’s, Macleod’s, Von Trapp’s, and Stoneburner will give you and idea of what these two have developed since they made the decision to join forces. While they are very successful owner/operators, their uncanny ability to source obscure materials and create unique dining environments really sets them apart in the industry.

So what happens when two of the best restaurant operators team up with two of the best restaurant designers? A brand-new partnership. The brothers Chatalas have teamed up with James & Deming to create something very special on the Eastside.Introducing Tavern Hall.

Tavern Hall will be located just off the sky bridge between Lincoln Square and Bellevue Square surrounded by a sea of free parking. Tavern Hall is going to be casual and fun—a place to hang out with friends, play some shuffleboard, watch the game, and order up the best burger on the Eastside. And yes, you can actually “hang out” there—they want you to.

“This is exactly the kind of restaurant I’ve always thought was missing from downtown Bellevue. This one-off entertainment driven concept will appeal to those looking for something casual, fun, and different. The space itself is going to be really distinctive and unlike anything that has ever been on the Eastside. This will be a Seattle dining experience tailored for a clientele on the Eastside.”

—BRET CHATALAS

Tavern Hall will offer 20 beers on tap with plenty of your local favorites, as well as a complete cocktail program. The menu itself will be standard tavern fare—think wings, pretzels, flatbreads, and a custom-grind burger program that will be the showcase of the offering. Add to that beer tastings, weekend brunch, and special dinner gatherings throughout the month—here think Sunday Supper and Spaghetti Night.

“Creatively, this project is really interesting because there really isn't anything like Tavern Hall on the Eastside. It will fill a void with approachable, upscale comfort food; a great burger, lots of delicious shareable appetizers, and a brick oven for flatbreads and pretzels. Personally, I couldn’t be more excited to place this kind of food in the context of such a large, lively environment.”

—BRENT NOVOTNY, CULINARY DIRECTOR

While Tavern Hall will be a huge draw for singles and couples looking for a way to relax and have fun, the space is also designed to be the premier private dining space on the Eastside. It will offer three separate spaces each suitable for groups of up to 50 and can be combined into one large space perfect for groups of up to 200 people.

“We are hoping Tavern Hall becomes a great place for groups to gather, eat, drink, play, and catch some games.”

—DEMING MACLISE

Regarding the space, if you’ve seen anything James & Deming have designed in the past you might have an idea of what they can (literally) bring to the table. The two have become quite adept at sourcing arcane material from all over the globe and Tavern Hall will continue this tradition. Collected thus far are some original lanterns from Coney Island, Church windows from Portland, Oregon, a giant clock from Buenos Aires, and an entire facade from a former psychiatric hospital in upstate New York. There will be several fire places, shuffle board tables, televisions for game day, and enough seating for 300 people.

“Our goal is to create an honest tavern with a comfortable, casual, and communal warmth where everyone is welcome.”

—JAMES WEIMANN

It’s natural to assume that the two groups behind this new endeavor might actually consider themselves rivals—after all, they both run wildly popular Mexican joints with outdoor patios where the margaritas flow freely—but that thought didn’t really occur to any of them at first.

“Days after signing a lease for the expansive space, we lost our architect/designer and we needed to quickly evaluate our options. We knew we had to create a space that would be incredibly compelling—reaching for iconic—and we’ve long thought that James and Deming were creating the most interesting restaurant spaces in Seattle, period. These guys are designers without equal, and should be getting national attention for their process and results. And so, despite “competing” with them in the Mexican arena, we knew bringing them into this project was our best chance at creating something special.”

—MARC CHATALAS

Tavern Hall is going to be an eclectic gathering place with a little something for everybody. And it’s also going to be an exciting partnership between two local restaurant groups hoping to bring something unique and vital to the Eastside. Tavern Hall is opening this summer.

Downtown Bellevue's Kaisho Redefines Brunch... Seriously

Chances are, you've walked by the red sign with the Japanese chef's knife (prior Boom Noodle) without noticing it was there, but have you dined there? If your answer is no, you better put it on the top of your list!  Where else can you get perfectly fried chicken and a smoked brisket okonomiyaki style hash in one sitting.

Under the culinary direction of Jeffrey Lunak, protégé of "Iron Chef" Morimoto, and Kalen Schramke, Chef de Cuisine. Kaisho pushes the limit when it comes to culinary experiments and combining global styles with local ingredients. What makes Kaisho one of our top picks of the month is the amount of detail that goes into each dish. From the ingredients, all the way to the presentation.  Kaisho's interior space is designed efficiently to accommodate solo eaters, group of friends, and as a family. Plus, we're a huge fan of the colorful lights.

TRIVIA: Kaisho means, “meeting or gathering place.” It’s where Japanese tradition and technique intersect with American originality and hospitality. Highlighting influences from all over the world, Kaisho reinvents modern dining through this combination of global influences, Asian flare and local ingredients. Partnering with farmers, fishermen and local artists, Kaisho highlights the seasonal bounty of the Pacific Northwest while celebrating artistic collaboration and human connection.

Walk in and be greeted by the wild candle dragon.

Colorful lights fill the air and add a sparkle to your table.

Plenty of seating for groups to get together for bites and drinks.

Fresh brewed hot tea

Bloody Mary with bacon.

Smoked Brisket and Kimchee Gyoza Style Dumplings with spicy dragon sauce. These aren't your typical dumplings, these are gigantic and an appetizer that's worth sharing. The combination of the smoked brisket pairs nicely with the spice of the kimchee.

Smoked Salmon Okonomiyaki Style Hash with baby greens, toban jan goat cheese, pickled onions, fried egg. This is what we call an "umami bomb!"

Bao Benedict house smoked pork, poached egg, dragon sauce, mizuna, and hollandaise. The combination of the salty smoked pork goes perfectly with the oozing egg yolk and hollandaise sauce. What makes this benedict different? Well, that right there is a hum bao bun.

Getting hungry yet? Here's the Smoked Brisket Rice Bowl, sunny side egg, kimchee, cucumber, shishito peppers, seasonal greens, citrus fennel. This is Kaisho's take on the classic Korean bibimbap dish and we loved it! The smoked brisket will make you Ooo and AHHH.

All the dishes we tried were stars, but the crown goes to the Thai Fried Chicken and Kimchee Waffles, free range chicken, kimchee infused waffles, coconut butter. This is seriously the best fried chicken on the Eastside... and may rub shoulders with the top spots in Seattle. But you be the judge and tell us.

Kaisho is located at 504 Bellevue Square in Bellevue, WA 98004. Brunch will be served Saturdays & Sundays from 11:00 a.m. until 3:00 p.m. For reservations, call (425) 453-6094.

When was the last time you heard about The Pink Door?

Besides the produce driven (mostly organic) seasonal menu, and the daily crowds that partake of it; take a glance at its wine list and you have something to talk about. Ever since owner Roberts decided that healthy eating was a priority in her own life, her focus on her wine program has been to highlight her 150 bottle wine list with grapes that were grown organically or bio-dynamically and produced with minimum manipulation.

Over the years, the gently priced mostly Italian list has morphed into a careful selection of small AVA’s in America ranging from the Finger Lakes area of New York (where Roberts grew up) to pockets of California all the way up the coast to Washington.

“My wine program would be 100% sustainable and/or organic except that Washington state trails behind Oregon and California in its pesticide free viticulture practices.” Roberts says, "Supporting Washington Wines is a priority for me because pairing regional foods with regional wines is an important part of my food philosophy.”

“An example of this is our pink peppercorn steak from Double R Ranch paired with the delicious 2010 Cab-Syrah blend from Washington’s Gordon Estate which used to be organic but is now sustainably farmed. BUT our emphasis remains organic and biodynamic Italian Wines ranging from the quirky Sicilian Estate Occhipinti SP68 Bianco to the Tuscan Querciabella Turpino, a Cab franc / Syrah blend. They are both still proudly made in the old world style and that’s what I look for,” Roberts said.

About The Pink Door

In 1981, a whimsically inclined twenty-something Italian American ingénue put her creative hooks and inspiration from travels abroad into a surreal cellar of a space that became equal parts Bohemian loft, Trattoria, and Pigalle cabaret. “La Padrona” Jacquelina Di Roberto, wasted no time filling the space with nuances, a seasonally changing menu of hearty, honest Italian food and wine, spirited service, and eccentric alluring entertainment. Some thirty years later, The Pink Door (http://www.thepinkdoor.net) remains a Seattle favorite with a fresh, constantly changing seasonal menu and eclectic nightly entertainment. The “hottest ticket in town” is Salute to Sriracha Night at Safeco Field on Thursday, May 22 vs. Houston Astros.  Fans of Sriracha, which has a devoted following, can celebrate their love for the spicy red condiment with a Main Level seat, a Mariners Sriracha t-shirt and a voucher for one menu item made with the hot sauce:
Sriracha cream cheese hot dog, Sriracha garlic fries, Sriracha milkshake.

The special Sriracha menu items are available only at the Big League Burger stand near Section 106 on the Main Level.

Tickets are just $25 and are available only at Mariners.com/Hot

Sriracha gets its hot, slightly sweet flavor from a purée of fresh red jalapeños, garlic powder, sugar, salt and vinegar. The tangy paste is packed in clear plastic bottles adorned with a rooster and a signature green cap.

The hot sauce, which last year sold 20 million bottles, was declared the “Ingredient of the Year” in 2010 by Bon Appétit Magazine, and has inspired entire cookbooks.

Here in the U.S., consumers know Sriracha as a brand name produced by Huy Fong Foods. It is loosely based on a spicy chili sauce common in Thai cuisine called nam phrik, which originated in the town of Si Racha, on the east coast of the Gulf of Thailand.

If there was a hideaway or an afterwork hangout spot for Superhero's, it would be the Pink Door. We wouldn't be surprised if we saw the legendary Phoenix Jones grabbing a glass of brew. Tucked away in the alleyways of the Pike Place Market, you'll find a pink door that leads you down a steep staircase to the main lobby area of the restaurant. Now that the weather is getting nicer, the rooftop terrance is an ideal spot for people who want to be in the city but without the shoulder to shoulder atmosphere.

Browse through a few of the seasonal items filled with the freshest produce, including delightful desserts, beautifully created by The Pink Door's pastry chef, Kurt Goddard. The photo above is the Spaghetti with fresh artichokes, the best olive oil, garlic, parsley & toasted bread crumbs.
