
Price was able to source The Met’s best fruit to date from the iconic Seven Hills and Pepper Bridge Vineyards in the Walla Walla Valley. The goal of the blending trials was to showcase the floral elegance and texture of Seven Hills, and add the ripe black currant power of the Pepper Bridge site. The end result is a polished, silky and absolutely delicious wine that blends seductive red and black fruits with clove, spice and vanilla from 16 months ageing in Saury French oak. "Our Snake River Farms American Wagyu Longbone Ribeye is a terrific match for the silky tannins and rich texture of the Metropolitan Grill Cabernet Sauvignon," said Price. "I also recommend the Double R Prime filet. I recently re-tasted it with Chef Hellner and it is eating amazingly well right now. It may be the best steak ever, and I am not even a filet guy!"
Tasting Notes: Pure and expressive with vibrant red currant, raspberry and cassis. Accents of baking spice and blackberry pie, around a supple core of ripe cherry. Silky tannins frame the long finish.

Winemaking: Hand harvested grapes were sorted and then fermented in small open top stainless steel tanks. The cap was gently punched down two times per day. After fermentation the wine was left on the skins for 14 days, then gently pressed and transferred to barrels to complete secondary fermentation. The wine was aged for 16 months in French oak barrels.
