Along Seattle's downtown district at the Marion food court, you'll find an interesting new restaurant called Buriyaki. Details have not yet been spoiled but it looks like it will be a take on Japanese cuisine mixed with classic American burgers. A popular restaurant with a similar take on this is Katsu Burger in Georgetown, Seattle which was started by a sushi chef of 20 plus years named Hajime Sato who wanted to make Japanese cuisine more accessible to the American palate... a must try!
