The "Paseo" of Vancouver, Meat & Bread opens in Seattle, Capitol Hill

The wait is over. Vancouver's popular sandwich shop Meat & Bread is officially open in Capitol Hill, making its first US debut. The Capitol Hill shop offers three staple sandwiches, which include: the Porchetta, Meatball, Grilled Cheese and a daily special sandwich announced each morning, announced around 9:30AM online and twitter. Canadian co-owners Cord Jarvie, Frankie Harrington and executive chef Joseph Sartor strive to produce a welcoming environment for guests and an affordable price point on all their sandwiches. Cord Jarvie said, “it’s about the nailing the customer experience and getting the first store right.” The management team plans on expanding to Meat & Bread to other parts of Washington (we can’t say yet) and shops in other states.

What makes Meat & Bread tick?

Let’s start with the space. It’s simple and modern. Look around and find floor to ceiling concrete walls, wood counter tops, high ceilings, and high top seating around the back side of the restaurant. Even the menu is “high” up. You’ll find a total of 8 dishes on the menu excluding drinks which range from various sodas, red and white wine by the glass, local cider, canned Rainiers for $1.50, and a local draft.

Now, the main attraction. The sandwiches. So, what does a Meat & Bread newbie order? One word, Porchetta. The Porchetta Sandwich ($10) is Meat & Bread’s crown jewel and the sandwich most famous for. The sandwich is moist, juicy, sweet, and tantalizes your palate with its crunch texture from the golden pork skin. Each sandwich is built to order, carved and chopped and laid into a fresh ciabatta bun. Once assembled, they’re served on a paper-lined wooden cutting board with a dollop of salsa verde that cuts the fat with a touch of zazz. This is a no frills sandwich as you won’t find any lettuce, tomatoes, or cucumbers and the like.

In addition to the Porchetta sandwich, guests can order a Grilled Cheese ($5) made with aged white cheddar have red onion, a Meatball ($9.5) made with lemon basil aioli, pecorino romano, and arugula. Daily Special Lamb Neck ($9) made with Moroccan Spice, Cauliflower Pickle, Minted Kale Salad, Hummus. Parfait ($4), ice cream sandwich.
